Such a “recipe” was given to the participants in the Gastronomic Forum of St. Petersburg by Pskov restaurant Andrey Filatov, writes the News of Small Business.
One of the sections of the program of the Gastronomic Assembly that took place recently in our city was called “Gastronomic trends and brands: the best experience of the two capitals and regions of Russia”. Andrey Filatov, a well-known restaurant in Pskov, a member of the board of experts of the Russian Federation of Restaurants and Hoteliers, commented on behalf of the regions of Russia.
It began with an unusual departure from the history of Pskov’s land. According to him, while there were wars in Russia in the 14th-15th centuries, the inhabitants of Pskov simply defended their interests, planted nothing, made mead and also made candles, sold them in Europe and, of course, got a toy. .
“We decided to start setting up our business taking into account historical data. The first thing we did was to open the Hansa restaurant, there is another similar restaurant in Riga. We created a German settlement and it became a tourist brand. The people of Pskov came to us, and the tourists. Now the restaurant has a different owner, but it is still cost-effective, – said the guest. – In 2014, we decided to make our own kitchen in restaurants, read history and realized that there is no pure Pskov cuisine. But if it does not exist, then we have to invent it, and unexpectedly we found pies, and according to the documents, baking bread is mentioned in our first books. According to him, even in the “History of Igor’s campaign” Pskov’s people are reportedly mentioned with their bread, the correspondent reports. News for small businesses.
“And we realized: here are ours – pies. Everyone says they need money for events. And we did that – first we made the “Pskov Pie Festival” for ourselves. The initiative came together and decided to treat each other to pies. I was invited to the place near the Kremlin, 15 people came and treated each other with pies. A year later, on the same day, fifty people had already gathered with pies and then tourists started coming, the pies were distributed for free.
“Today is a holiday in the city and representatives from education and tourism are already gathering in my office and we are deciding how to further develop this holiday. We won a Presidential Grant, we already have great support and it all started with a little chat in a small cafe and we treated each other to pies. And it became financially profitable. Today, many restaurants in Pskov have pies on the menu, many children’s tourist groups come to town and their pies “come with a bang”. Adults have a healthy lifestyle and children need carbohydrates. “This is good for us and they eat with pleasure.”
Andrei Filatov criticized the pancakes served at the assembly as St. Petersburg breakfast with the usual additions, saying that in the Pushkin edition they should be served with white gooseberry jam.
Pskov’s restaurant sparked public interest with a story about the great culinary expert … AS Pushkin. “He is not only a great poet, but also a great cook,” said Andrei Filatov. – Pushkin walked a lot in Trigorskoye and somehow returning late, having come to the estate and passing by the kitchen, he saw on the stove a cast iron with boiled potatoes. He was very hungry, he threw wood, he peeled the potatoes, he fried them in a pan, he was very full and he wrote to a friend: “My friend, you know how delicious potatoes are!”
At that moment, the poet became a great expert in cooking, as the secondary heat treatment of the product was used for the first time and many restaurants still serve Potato a la Pushkin. So the roots of this dish are from this story “.
And his third story in the Gastronomic Assembly was related to fishing. “We have Lake Pipsi, there are many commercial fish in it, but there are significant obstacles to fishing, as the state can not decide on the nature of the reservoir. “But we saw the potential for gastronomic tourism there and opened a route there, as this is a great place to relax,” said the narrator. – The settlement in this place was called Alexandrov Posad, founded by Alexander I. There are two islands in Lake Tolabsky and Upper, in the last one a natural park with dunes and pines. And in general, the history there is from the time of the knights.
According to him, in this restaurant in the beginning they ate without any menu, it was written just “catch”, since it is impossible to predict the composition of the catch, as well as to guarantee a specific dish with fish. “And for the last six years we have been declaring such a place there – one dish is fish, the other is not fish,” said Andrei Filatov hastily. – He caught, for example, a pike – today either a fillet of it, or cutlets, and tomorrow an ear – where else to put the bones. Today this two-course restaurant is very popular. “And most importantly, the islands have started to develop, life and business are returning there and the state has built 2 ships to transport tourists there.”
And finally, the Pskov visitor gave advice to entrepreneurs: “The idea is simple for a small business – a restaurant decided to change the world, it is important to change the life inside you, so you want to change the world, then everything will I am processing. The main thing is to love the place where you live and slowly dig up recipes and popularize old dishes. It is true that people now want to eat delicious food, not just archaic. “I want you to learn how to make delicious simple things.”
And in the end he said how we are different from the French. One of those who studied told him, “You want to make it beautiful, but it’s better to make it delicious.”
